Coconut Pecan Cookies 🍪
Ingredients:
17 tbsp unsalted butter, softened
3/4 cup brown sugar packed
1/3 cup granulated sugar or sugar substitute
2 eggs
1 tablespoon vanilla extract
1 1/4 cups all purpose flour or almond flour (consistency/taste will slightly change)
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon salt
1 cup finely chopped pecans
1 cup sweetened coconut flakes or shredded
Instructions:
1. Preheat oven to 350º F.
2. Use a spoon to mix together 1 cup butter (2 sticks/16 tablespoons), brown sugar, granulated sugar, eggs and vanilla in a large bowl until well combined. Do NOT overmix.
3. In another bowl, combine flour, baking soda, cinnamon and salt.
4. Mix flour mixture into butter mixture, being sure not to overmix.
5. Mix in pecans and coconut.
6. On a greased baking sheet, roll dough into balls, approximately 1 1/4 to 1 1/2 inches in diameter. Place dough balls onto baking sheet about 1 1/2 inches apart.
7. Bake approximately 13 minutes until cookies are light golden brown.
