Decided to go with a lighter meal this time around since we've really enjoyed a ton of delicious smoked BBQ recently (don't worry, there'll be plenty more to come). This healthy Mediterranean Pasta with Shrimp is SUPER EASY, light and full of flavor. The herb plant you saw in the video? It was basil. If you know me, then you know my love for chicken is unreal 😂 . Ever since I got married and moved away, I haven't been able to enjoy all the delicious food my mom makes. So I decided to make..Thai Basil Chicken! Low Carb, High Protein Waffles
My first ever pour shot!!! I've been in search of the perfect recipe for protein waffles because let's face it...who doesn't love a good buttery, airy, crispy golden waffle?!
All deliciousness aside, I actually have been in diet mode for some time now and I've got only 5 weeks to go until I hit LA (for work) and I want to be ready for it. I decided to give this recipe a try in hopes that it didn't leave the dry, protein powder texture and taste.
Result? These were THE BEST tasting lower carb protein waffles I've ever tried thus far and these will definitely satisfy your waffle craving, especially on a diet. Pair it with your favorite syrup and/or fruit(s). .
* Fair warning, it'll heavily depend on the kind of protein powder you use as well and my go to was the @gasparinutrition Vanilla Ice Cream Myofusion protein powder. Myofusion is even GREAT in plain water and milk (vanilla ice cream shake, anyone?)
Ingredients:
• 2 scoops of your favorite protein powder (I used Gaspari Nutrition's Myofusion)
• 2 tbsp peanut butter (make sure it's creamy, with no sugar added)
• 3 tbsp coconut oil (melted)
• 3 large eggs
• 1/2 tsp gluten free baking powder tbsp gluten free baking powder
• A SPLASH (very important as too much can ruin it) of almond milk.
•1/2 tsp sea salt (optional)
Directions:
1. Place all ingredients into a blender, and blend until smooth. Be sure not to over blend. You're basically just trying to make sure you get rid of lumps and to make sure the dry ingredients are well mixed. Over blending could result in really thick batter .
2. Preheat your waffle iron. Transfer the batter into the waffle iron (it will be thick) and distribute evenly. Cooks for about 4-5 minutes, but it may vary manufacturer to manufacture. Typically golden brown.

I was craving a simple noodle dish that my wife and I could enjoy for our meal prep lunches for the week and I came across a pad kee mao (spicy thai drunken noodles) recipe. For those of you who really know me..you'd know that I've been trying to cut out sugar and have been watching my sodium intake lately. I replaced regular sugar with a substitute and used low sodium soy sauce instead. It still tastes amazing, I promise! Skip the take out and take pride in something that tastes just like the restaurant. Enjoy!
